Ingredients Breakdown

  • Unsalted butter: Provides richness, a tender crumb, and helps the cookies hold their shape while baking.
  • Light brown sugar: Adds sweetness, moisture, and a subtle caramel-like flavour that deepens as the cookies bake.
  • Granulated sugar: Enhances sweetness and contributes to a slightly crisp edge on the cookies.
  • Egg: Binds the ingredients together and adds structure while keeping the cookies soft.
  • Vanilla extract: Enhances the overall flavour and complements the sweetness of the candy.
  • Plain flour: Forms the base of the dough, giving the cookies structure and helping them hold the mix-ins.
  • Baking soda & baking powder: Provide lift so the cookies are soft yet slightly airy, preventing them from being too dense.
  • Salt: Balances the sweetness and enhances all the other flavours.
  • Reese’s Pieces: Add bursts of peanut butter-flavoured candy for texture, colour, and extra sweetness.
  • Chocolate Chips: because who doesn’t love chocolate chips!
  • Sugar eyes: Added after baking to give the cookies a fun, playful appearance. I used these ones.

Recipe Tips

  • For a thicker cookie, chill the dough for 30 minutes before baking.
  • Add extra Reese’s Pieces to the tops before baking for a more bakery-style look.
  • Store in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months.

Recipe Variations

  • Double chocolate – swap 2 tablespoons of flour for cocoa powder for a richer cookie.
  • Mini cookies – make smaller 25 g portions and bake for 8–9 minutes.
