Apple Blondies
These Apple Blondies are soft, chewy, and buttery with just the right hint of cinnamon and chunks of juicy apple throughout. They’re a quick and easy bake that makes your kitchen smell amazing, and the texture is that perfect balance between gooey and golden. They slice neatly once cool, making them great for packed lunches or afternoon snacks. Delicious on their own or slightly warm with a scoop of ice cream.

Ingredients
- 115 grams unsalted butter melted ½ cup
- 200 grams light brown sugar 1 cup
- 1 large egg 1 large egg
- 1 teaspoon vanilla extract 1 tsp
- 125 grams plain flour 1 cup
- ½ teaspoon baking powder ½ tsp
- ¼ teaspoon salt ¼ tsp
- 1 teaspoon ground cinnamon 1 tsp
- 1 medium apple peeled and diced 1 medium apple
Cinnamon Glaze:
- 100 grams icing sugar ¾ cup powdered sugar
- 1-2 tablespoons milk or cream
- ½ teaspoon ground cinnamon
- ¼ teaspoon vanilla extract optional
Instructions
- Preheat oven to 175°C (350°F). Line an 8-inch tin with parchment.
- Melt butter, then stir in brown sugar, egg, and vanilla.
- Add flour, baking powder, salt, and cinnamon. Mix until just combined.
- Fold in apple pieces.
- Spread batter in the tin and bake 25–30 minutes until golden.
- Allow to cool on a wire rack.
- Make the glaze - mix the icing sugar, cinnamon and milk together in a large bowl. Drizzle over the blondies and enjoy!
