Ingredients

  • 115 grams unsalted butter melted ½ cup
  • 200 grams light brown sugar 1 cup
  • 1 large egg 1 large egg
  • 1 teaspoon vanilla extract 1 tsp
  • 125 grams plain flour 1 cup
  • ½ teaspoon baking powder ½ tsp
  • ¼ teaspoon salt ¼ tsp
  • 1 teaspoon ground cinnamon 1 tsp
  • 1 medium apple peeled and diced 1 medium apple

Cinnamon Glaze:

  • 100 grams icing sugar ¾ cup powdered sugar
  • 1-2 tablespoons milk or cream
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon vanilla extract optional

Instructions

  • Preheat oven to 175°C (350°F). Line an 8-inch tin with parchment.
  • Melt butter, then stir in brown sugar, egg, and vanilla.
  • Add flour, baking powder, salt, and cinnamon. Mix until just combined.
  • Fold in apple pieces.
  • Spread batter in the tin and bake 25–30 minutes until golden.
  • Allow to cool on a wire rack.
  • Make the glaze – mix the icing sugar, cinnamon and milk together in a large bowl. Drizzle over the blondies and enjoy!
