Ingredients
- 115 grams unsalted butter melted ½ cup
- 200 grams light brown sugar 1 cup
- 1 large egg 1 large egg
- 1 teaspoon vanilla extract 1 tsp
- 125 grams plain flour 1 cup
- ½ teaspoon baking powder ½ tsp
- ¼ teaspoon salt ¼ tsp
- 1 teaspoon ground cinnamon 1 tsp
- 1 medium apple peeled and diced 1 medium apple
Cinnamon Glaze:
- 100 grams icing sugar ¾ cup powdered sugar
- 1-2 tablespoons milk or cream
- ½ teaspoon ground cinnamon
- ¼ teaspoon vanilla extract optional
Instructions
- Preheat oven to 175°C (350°F). Line an 8-inch tin with parchment.
- Melt butter, then stir in brown sugar, egg, and vanilla.
- Add flour, baking powder, salt, and cinnamon. Mix until just combined.
- Fold in apple pieces.
- Spread batter in the tin and bake 25–30 minutes until golden.
- Allow to cool on a wire rack.
- Make the glaze – mix the icing sugar, cinnamon and milk together in a large bowl. Drizzle over the blondies and enjoy!
